I've been very happy with heavy, nigh-indestructible utensils like cast iron. <[Brennen]> The other great thing about cast iron is that it's really not that expensive and can easily be found used. <[Brent]> Yeah. Only disadvantage I've found is in the cleaning -- if standing water is left inside it, it'll form a layer of rust quickly. Which can be scrubbed off, but still. Icky. So, you have to clean it relatively quickly. <[Brennen]> Yeah. I was raised in the school of thought that you clean cast iron immediately with really hot water and no soap (or as little as possible), then hand dry. And season the pan right away if you did use soap.
