- <[[Brent]]> Nit: How is bread supposed to be messy? I ask because I started making bread a few weeks ago, and the process is measured, controlled, and very much not messy.

- <[[Brennen]]> I don't suppose that bread itself is intrinsically messy, crumbs aside. On the other hand, I don't know how you go about it, but every time I've been involved, it is anything but "very much not messy". Of course this is a question of approach, technique, equipment and competence. It's altogether possible that bread *isn't* supposed to be messy. I doubt I'll ever find out, because when I make things there is almost always a mess.

- I don't know what I was thinking when I started that list, but I know what comes to mind now - some time over the summer, I hung out one night at an organic food co-op where a friend of mine did the overnight baking. I mixed a batch of muffins and watched the breadmaking process, which involved a couple of heavy duty mixers and lots and lots of flour. It was a mess. It seemed like it probably should be that way.
